I'm finally trying out some of the recipes from the Spark Recipes site. For tonight's dinner, Pong Pong Pork Chop...they turned out pretty good, got the thumbs up from my daughter and mom. Later in the week, Veggie Lasagna and Herbed Bulgur Salad. I also stocked my pantry with some brown rice and lentils. Mid week I will pick up some more fresh fruit and veggies. Slowly but surely, incorporating more and more healthy lifestyle into my daily routine.

This morning I did a step circuit class at the gym...KILLER! My motivation, a couple in front of me who had to be in their seventies. There was no way in the world I was going to quit before they did, lol.
