Breakfast: Green monster and oatcakes

After hearing FIT_WHIT rave about Oh She Glows, an off-Spark fitness blog run by a bakery owner, yesterday I decided to try making my own green monster, which is basically a spinach smoothie for breakfast. The site

claimed that I would not be able to taste the spinach at all. So here goes.



Mmmmm spinach.

It actually turned out tasting more like banana and peanut butter than anything else. I also swapped the almond milk for soy. To round out the brekkies I added a homeade apple-oatcake crumble (still working on perfecting the recipe, will post soon) and some earl grey tea.



Healthy breakfast to the rescue. Total 400 calories, including a Tbsp of peanut butter in the smoothie.

Today I repeated the endeavour but replaced the peanut butter with three strawberries, the chia seeds with flax and the Earl Grey with Pu Erh (red tea). Spinach smoothies just might be the secret to getting enough folate without supplements! (At least until I decide to have a baby)

    Yum! I have been totally into the green juices int he morning. Now that my Vitamix is on the way, it will be green smoothies. Just make sure you switch up the greens. The body thrives on variety!
