Project Kick Processed Foods - Day 1

Today was my first day without processed foods and a successful one at that! I thought it would be harder but now I really think the hardest thing will be being prepared. I felt like I ate alllllllllllll day long and I was still under my target range for fat and calories.
Plain Greek Yogurt (YUCK!)

Baked Panko Crusted chicken
Baked red skin potatoes with olive oil
I meant to eat a salad for lunch but woke up late this morning so I didn't have time to prepare. But, I got it all ready tonight so I can just grab it tomorrow!
I want to go to the gym tonight, but I got a call from work while I was getting ready about a fatality claim and I had to sit down and make some phone calls... boooooo! Definately tomorrow, though!
