to track or not to track

i work midnight shifts 4 nights a week so i am not to sure when i should track my food do i track them for the day i go in to work or the day when i leave work ( i start thursday night at 11 and finish work friday at 7am just to kinda give you a picture) i pack some snacks and a meal so do i track the meal for tursday or for friday.
i walk to work most of the time witch is a 3k walk i do it in 30-40mins witch i think is a good time then i am on my feet the whole 8 hours i get 3 10 min brakes at work 2 out of 3 of the breakes i walk up and down the stairs or walk up and down the hall way then after work i walk the 3k home a little slower due to the fact that i am tired and sore.
on the 3 days i am off work
i walk a lot ( i dont drive yet soon i hope)
go for bike rides with my child
i try to do some jogging
do some workout dvds
thats just some of the things i do i just thought i would share just in case some one get a tip out of this
