My Weekly New Recipe Challenge to myself

I’m quite excited to be making a new recipe today. It’s a Monday. How many people can sympathize with the working person’s ‘What’s for dinner?” cry that is heard on Mondays as they come in the door?
My new recipe challenge to myself for this week is “Crockpot BBQ Chicken”. This recipe was featured in a local weekly newspaper and was added to the SparkPeople Recipe database by Kogo_Shuko. Thank you to Kogo for sharing!
This morning at 7:15 a.m. I placed a whole chicken in my crock pot and mixed the sauce ingredients to make this dish and poured it over the chicken. Put the lid on the slow cooker, plugged it in the wall, and set it on low as I walked out the door. We will be having this BBQ chicken later today served with a wild rice medley and candied carrots.
Not only does this recipe solve my Monday evening “what’s for supper” dilemma it also is giving me my new recipe of the week, is enabling me to use my crock pot, will give me lots of leftovers for lunches( so I guess its batch cooking), and I hope to be able to make some soup stock with the carcass(more batch cooking). How great is that?! All this with the minimum of effort and ingredients.

No more than 3 to 5 pounds of chicken. I used a whole chicken, but I think Kogo may have used skinless boneless chicken breasts. Whatever is your fancy!
12 oz of chilli sauce
1/3 cup lemon juice – I didn’t use this much
1 tbsp worceshire sauce
2 tbsp fancy molasses
1 tsp salt
1 tbsp chilli powder
½ tsp garlic powder
I also added some diced onion.
Dump it all in the crock pot and cook on low. Voila!
