Spark Recipe- Shrimp Zucchini Couscous

250 g shrimp, thwed
1/2 cup couscous (dry)
1 medium Zucchini, chopped
1 medium carrot, chopped
1 medium tomato, chopped
2 minced garlic cloves
1 cup vegetable broth ( i used chicken broth)
1 small red onion

In a skillet, add olive oil, shrimps and garlic, stir fry briefly over medium heat, add zucchinni, carrots and tomato.Simmer for about 3-5 minutes to cook through, add vegetable broth, take skillet of heat and add coucous. Let it sit for a few minutes untill couscous is done, fluff with a fork and enjoy!
