Pizza Veggie Burger

There hasn't been any food in the fridge for the past two weeks, so I keep having to experiment if I don't want to go hungry. For Lunch?

Veggie Pizza Burger!

(The picture didn't do the thing justice! Otherwise, you would see it in all its glory right in this space.)


1 - 6" Flour Tortilla

1/4 cup shredded Mozzarella

1/4 cup pasta sauce

1 Veggie Burger (I chose Gardenburger's Black Bean patty)

Place mozzarella and pasta sauce on tortilla. Toast until cheese is nice and melty. Meanwhile, heat up veggie patty. Place patty on cheesy tortilla. Roll up and enjoy!

Okay so it doesn't taste exactly like a pizza but my tummy was content. And obviously, this would be great with some greens and probably better on real hamburger buns but like I said, bare fridge! Any good recipes that have come about from your experimentation?

    Chicken-tel is what I like to call it, but basically I just used 3oz. of canned chicken breast, 1/4 cup of mild Rotel drained, and a slice of fat-free cheese. I ate this as a snack since my snacks have to be b/t 100-200 cal., but I'm sure it would be ok for a lunch. Oh I heated the chicken in the microwave for 1 min then topped it with the rotel and cheese and cooked for another 20 sec....YUMMY!!!;~) Oh and I love oven fried catfish too. Quick and easy I used Nona Belle's fish breading which is corn meal, paprika, celery salt, red pepper,a lil salt, and black pepper. Rinse fish, roll in breading, spray pan with PAM, and place in oven...turn fish over after 15 min. and cook on other side until done. Hope this helps!
