New produce goal - results, week 1 & 2

Okay, so I knew going into this that I needed to increase my intake of fruits and veggies in my daily diet. But I also knew that my "likes" of produce tended towards a limited few. So, in my effort to increase my horizons on produce that I may like or even dislike, I decided to make this a main goal for myself. I must purchase and try a NEW fruit or veggie every week. So, here are my first two weeks results:
WEEK 1: Chayote Squash - My daughter likened this to the "muppet mouth" squash! It is a nice solid pear shape and size squash. light green skin, white flesh, but with a sweetness that I did not particularly care for in a squash that I purchased for my veggie soup. This would be good sliced up raw for dipping, I just did not care for the overall flavor in my soup. But I think I will try this again as a raw veggie with carrots & broccoli.
WEEK 2: Prickly Pear - went with a fruit this week, did not really think about the fact that it is indeed a cactus! My daughter and I squeezed a dozen different fruit to find a nice solid fruit to buy, and spent the rest of the afternoon pulling little, tiny invisible cactus spines out of palms!! Lesson learned!! Anyways, peal the skin carefully, the fruit pulp is a very deep purple, and very juicy. I wanted to eat mine raw with my lunch so that is what I chose to do. This does have large seeds in the fruit, similar to Pomegranate seeds. Personally, I did not find the fruit very appealing. Possibly if I mixed in a smoothie or found a recipe as this is popular in Mexican dishes. But, this is one item I do not think I will be purchasing again.
So, There you have it. My first two weeks. Stay tuned for week three. What will it be? Fruit or veggie?
