greek lemon and chilli chick pea soup recipe!!

Lots of you commented on my lunch today so i thought i'd share the recipe with you.....

1 can of chick peas (or dried and soaked overnight)
lemon juice
1 medium onion
1 tbsp olive oil
1 tbsp flour (I used cornflour)
chilli flakes or cayenne pepper
salt and pepper
hot water

1) Heat the olive oil in a heavy pan or le creuset pot, add onion and saute until it begins to colour.

2)Drain chickpeas and add to pan, stir to coat in oil and then add enough hot water to cover them by 4cm. Slowly bring to the boil, reduce heat and add salt and pepper (if using), simmer until the chick peas are soft.

3)Put the flour in a cup and add enough lemon juice to make a runny paste when whisked with a fork. Add to the pan and stir well. Add the chilli flakes or cayenne pepper (as much or less as you like depending how hot you like it). Cover and cook for a further 5-10mins.

4)Remove about 2 slotted spoon fulls of chickpeas and roughly mash. Stir into the soup to thicken and mix well.

5) Add parsley and taste soup, add more lemon juice if bland.

This made two large bowlfuls for me. And according to the nutritional info on my ingredients was 160 calories per bowl!!!! I found it really light and tasty - Hope you all enjoy it as much as i did!!
