31 Days - March 9: Eat the Healthy Stuff!!

Today, Spark tells us to:
Start at the perimeter of the grocery store. Fruits, veggies, dairy and grains, which should make up the bulk of your diet, are located here. Eating these unprocessed foods boosts your nutritional intake and promotes health.
I am happy to report that much of my grocery shopping does get done in this very way. We are cottage cheese and yogurt eating, milk drinking fools in my house, with more than our share of fruits and veggies..you would have to search long and hard to find a single piece of non-whole grain bread, or white rice in my cupboards. Especially during the Lenten season, which began this week, I am huge into cooking with lentils and beans..
I will say that I am somewhat disappointed in myself about one thing: I do not take the time to make myself salads they way I should. I LOVE salad, I revel in it. It doesn't have to be a fancy salad, some romaine and green leaf lettuce, red onion, a bit of tomato, maybe some shredded carrots..a little EVOO and balsamic vinegar.. That is my definition of the perfect food. But my crazy busy schedule has kept me from taking the 15 minutes I'd need every week to wash and spin and bag all my lettuce to make salad making a cinch.. Instead, I'm luck to make salad for myself once a week, and many weeks not even that..
So I will pledge to try to do better on the salad, because I don't think there is a single dish that could positively impact my diet in terms of filling me up with healthy stuff more than adding that more to my daily and weekly eating..
