Thanksgiving stall

I thought I did very well at Thanksgiving. I am a low carber and the main thing I had was regular stove top stuffing ( not low carb at all). I ate no more than 1 serving. I was real proud of myself for not over indulging and I kept my desert to a low carb key lime pie I had made. But when I weighed a day or 2 afterwards the scales had went up 4 pounds.Surely the stuffing did not add up to a 4 pound weight gain. Still no big deal, could be water retention.But then it stayed there for several days. Then I began wondering what am I doing wrong? I could not think of anything except maybe I was not getting enough calories even though you do not count calories on most low carb diets that I know of, but still the thought of not getting enough calories and my body going into starvation mode and slowing down my metabolism is the thought that did come to my mind. So I have been trying to make sure I eat enough. My scales finally moved when I weighed this weekend. The initial 4 pounds gained is gone plus 1 more pound. My new goal is to track my food better so I can be sure I am eating enough to not slow down my metabolism ... As far as things that are higher carb than what I am allowing myself normally, We'll just have to see. I am making low carb pecan pies for christmas. Dessert will not be a problem, but Stuffing just might! emoticon

    Maybe your Thanksgiving dinner and what you've been eating had / has a lot of sodium content to it and it was water retention. Congrats on the 5 pound loss!!! emoticon
