Thanksgiving Recap - Yummy Dessert Recipes - and Finally Back on Track with Monday's Food Blog!!!

Happy Monday!

This past week has been CRAZY to say the least. We have gotten so much done on our new house in the past week as both Hubby-to-be and I had 5+ days off from work together. It was nice to get so much done, and to do it together. Now, however, we are back to work and renovations are going to slow...

We have to move-in in less than 3 weeks. We still have so much to do... it is not even close to being a comfy home yet.... but we will get there!

I was great through Thanksgiving and even posted a .4# loss on turkey day.... but then the rest of the weekend happened.

Because our house is in shambles we literally ate out 90% of our meals last week. I think I ate a total of six donuts in the last week for breakfast?! I can't even begin to tell you how gross I felt...

But moving on... Today is a new day. I batch cooked some vegetarian chili last night and I have my fridge at the apartment stocked with healthy foods for the week ahead.

Yesterday I did 30DS L1 and L2. It felt great to get a good sweat in.

I have no time for exercise today because I have class right after work, but tomorrow I am going to attend Muscle Conditioning and Bootcamp Class!

I am going to make this week count!

Goals for this week:
1. Lose 2#
2. Exercise 5 days this week!
3. Make Healthy Food Choices
4. Get 100% caught up with my MBA course work!

Now may I present the very delicious Thanksgiving Dessert Recipes that I made (BEWARE: Not very Spark-like!!!)

1. Magic Bars - Graham Cracker Crust with layers of melted chocolate chips, butterscotch chips, pecans, coconut, condensed milk, and topped with melted chocolate drizzle! These are heaven!


2. Pumpkin Swirl Cheesecake with a Ginger Snap Crust



And now to get 100% back on track - Today's Food Blog:

Breakfast:

1 Egg with American Cheese on a Thomas' Multigrain English Muffin and 16 oz. of Water

Mid-Morning Snack:

Banana w/ 16 oz. of Water and Coffee w/ Milk and Sugar

Lunch:

1 Serving of Vegetarian Chili w/ Shredded Mexican Cheese

Mid-Afternoon Snack(s)

Chobani Strawberry Greek Yogurt and 2 Clementines

Dinner:

Subway 6" Veggie Sub on Honey Oat with Sweet Onion Fat Free Dressing

    The desserts look fabulous. It is terrific that you got so much work done and in 3 weeks time you will be living in your home whether you are completely ready or not emoticon
