Quick Pumpkin "Pie" & made-over chocolate peanut butter

I am tired of buying 1% fat pumpkin pie limited edition yogurt at Safeway. I prefer my yogurt non-fat. Last night I had two containers in my cart, but put them back!

I didn't want to wait until tonight, so this morning I finally opened up a can of pureed pumpkin. I keep buying cans of it, but never open them (bawk bawk bawk, big chicken noises)!

For a quick pumpkin pie I mixed up
4oz pumpkin puree
4oz Fage 0% yogurt
1 tsp pumpkin pie spice
1 Tbsp pure maple syrup
I heated this up for one minute. It was warm and the edges turned into a cheese-cake like consistency! yum

Puree 40 cal, 9 carbs, 1 fat, 2 protein
Fage 60 cal, 5 carbs, 0 fat, 10 protein
Spice 5 cal, 1 carb, 0 fat, 0 protein
Maple 52 cal, 13 carbs, 0 fat, 0 protein

Totals 157 calories, 28 carbs, 1 fat, 12 protein
Chocolate Chip Peanut Butter Dessert
I mixed up
1/4 cup Trader Joe's defatted peanut flour
2 tsp Agave syrup
add water until desired creaminess reached
Normally I have this once or twice a day, but
For the first time I added
1 Tbsp of mini chocolate chips
Nutritional facts
Peanut Flour 110 cal, 8 carbs, 4 fat, 16 protein
Agave syrup 30 cal, 8 carbs, 0 fat, 0 protein
Mini choc chips 70 cal, 9 carbs, 4 fat, 0 protein

Totals 210 cal, 25 carbs, 8 fat, 16 protein
FYI: normally 2 Tbsp of peanut butter has 16g of fat, this has 8 total AND this has 1,150 mg of potassium.

Question: Are you getting your 4,700mg (minimum) of potassium daily???

    I never get enough potassium, but the last time I was to the doc, I asked him about it. He looked at my blood profile and said all was OK. I have wondered about that. Am I not tracking well enough to show what I get, or do we not really need that much? I have a diabetic appointment on Friday next week, so will have blood work done again. I'll see what it is this time.

    Sounds good. Getting enough potassium is hard but I work on it daily. It is very important!! A few years ago I was in a coma for 3 days. My potassium was rock bottom which sent my blood pressure sky high. I thank God I didn't have a stroke or stay in the come forever!!
