I love Thursdays... because they mean that tomorrow is Friday!
Last night's class dragged on forever and I did not get home until after 10pm, just in time to whip up a quick english muffin, make lunch for today, and lay my head on my pillow. I was fast asleep within 15 minutes of walking in the door... literally.
One year ago today I was sitting on the sandy beaches of Aruba next to the love of my life. Little did I know that within hours he would be down on one knee proposing to me...
Here is a glimpse back at us a year ago today...
On our way to dinner the night he proposed (I still had no clue of what was to come at this point...)

And in less than 6 months we will be walking down the aisle and saying I DO!
Today starts CARB CYCLING! and today is the first low-carb day which means my goal is to eat no more than 125g of carbs and to eat 80g of protein (which as a vegetarian is very hard to do!).... with today's meal plan I am very close to both of those goals!
1 whole egg, 1 egg white, 1/4 cup chopped green pepper, 1/4 cup chopped onion, 1/2 cup spinach, and feta cheese all scrambled together! ... with 16 oz. of water!
NO COFFEE TODAY.... Oh the HORROR!!!!
1 10" multi-grain tortilla quesadilla stuffed with 1/2 cup of black beans, 1/4 cup chopped pepper, 1/4 cup chopped onion, Trader Joe's fresh salsa, and 1/2 cup of shredded mexican cheese blend
1 serving of cocoa roasted almonds
Tonight turned into a nightmare... no exercise and I downed 3/4 of a small pizza.
Calories: more than 1,600
Carbs (goal under 125g): 160g
Protein (goal over 80g): 77g
Fat: more than 60g
Sodium: more than 2,600mg
