I had yesterday's menu all planned out first thing in the morning... but I ended up blowing it at dinner. I used more EVOO and spices than anticipating and I also had two dinner rolls that pushed me over the edge. And to make matters worse, we were out of Brown Rice so I used Butter/Herb Wild Rice that we had on hand... and that was definetly not an equal substitute by any means! ... and Hubby brought home wine (so of course I had a glass) to celebrate the fact that our wedding day is exactly 6 months away!!!

Oh well... it tasted delicious emoticon ... and I at least had an intense 60 minute work-out where I did 50 minutes of circuit training and 10 minutes on the elliptical! I felt the work-out in all of my muscles! I left the gym feeling sweaty and strong!

So... today is a new day and I am going to stick to today's menu 100%.

I was a bad food blogger and forgot to take actual pictures of my Breakfast, so internet pictures will have to suffice!

3 Krustez Microwave Pancakes

1.5 Tbsp. of Trader Joe's Organic Agave Maple Syrup

1 serving of Fuze Pomagranite Acai Berry Juice

Medium Cinnamon Cream Swirl Coffee w/ Milk and Sugar

Leftover Tofu, Rice, and Veggies from dinner last night

Mid-Afternoon Snack:

1 Gala Apple and Trader Joe's Ruby Red Chai Tea

Two Baked Manicotti with Ricotta Cheese, Spinach and Onions and a Side Spinach Salad w/ Balsamic Vinegar and 1 Slice of Multi-Grain Garlic Bread

Calories: 1,240
Carbs: 201g
Fat: 35g
Protein: 42g (Way to low... I need to fix this!)
Sodium: 1,852 mg

20 Minutes on the Elliptical
10 Minutes Stretching
100 Crunches
10 Push-Ups

... and I may or may not have peaked at the scale this morning. I am up from Saturday's weigh-in! I am eating a little too much this week. I need to cut back just a tad! ... and I am going to br focusing on my water intake to flush out any extra sodium!!!

Have a Happy Tuesday!!!

Protein boost suggestion... Clif Builders Protein bar. 20g Protein, 270 calories, 8 g fat, 310 sodium, 210 g potassium. (peanut butter and mint choc are highly recommended!)

Hugely filling. It could satisfy for lunch on the run in a pinch. Dangerously tasty. You can find them in grocery stores or some convenience stores.

This is about the only pre-made packaged food that I buy. I much prefer to make everything from scratch, but sometimes I need the Protein boost.

    Keep up the good work!
