Happy Monday Sparkies!

I hope you all had a wonderful weekend!

My weekend was full of relaxing, small indulgences, and tons of exercise!!!

This weekend I indulged my cravings, but I did so in way that was healthy and mindful of my choices. I do not feel like I splurged and I did not go over my ranges either... It was a successful weekend!!! ... I even did more cardio and ST than usual on the weekend! I burned over 1,500 calories in just Saturday and Sunday alone!!!

And.... today begins another start to the work week... and it is going to be a busy one! Not only do I have substantial work to do in the office, but I also have to start working on a Research Paper for my MBA, as well as finish up another group project due by the end of this week!

But on a good note... I am mailing out the first half of our save-the-dates today and then hopefully mailing the second half tomorrow afternoon! That is a HUGE check off of my to-do list!

I did get a whole lot of errands and cleaning done yesterday so at least my home life is organized and stocked with healthy choices for the week to come!!!

We close on our house in 10 days!... I can't wait to officially be able to say that I am a HOMEOWNER!!! emoticon

... and I am getting MARRIED in 6-months from today!!!! I can't wait to say "I DO" in front of all our family and friends!!! emoticon

I also noticed this morning that I am only 208 Fitness Minutes away from meeting my 2010 fitness minutes goal!!! I should easily meet my goal, and surpass it, this week!!! emoticon

Now onto today's food blog:

Breakfast:

1 egg with 1/8 cup of shredded mexican cheese on two slices of Brown Sugar & Cinnamon Bread with 1 serving of Pomegranate Acai Juice

...and of course a Cinnamon Vanilla Cream Coffee with Milk

Lunch:

I was craving PB&J... and therefore I am having 2 slices of Fiber One Multi-Grain Bread with 1.5 Tbsp. of Almond Butter and 1.5 Tbsp. of Low Sugar Strawberry Preserves.... and a Pomegranate Chobani Greek Yogurt

Mid-Afternoon Snack:


Trader Joes' Apple-Strawberry Fruit Leather w/ Ruby Red Acai Tea

Mini-Snack while Cooking Dinner...

4-5 Trader Joe's Corn Chips w/ Fresh Salsa

Dinner:


1 Trader Joe's Vegetarian Egg Roll with 1 Serving of Tofu Not-Fried Rice (brown rice, edamame, carrot, onion, soy sauce, and pan-seared extra-firm tofu)

... I also had 1 piece of Espresso 70% Dark Chocolate before bed as dessert!!!

Calories: 1,460
Carbs: 201g
Fat: 45g
Protein: 59g
Sodium: 1,288 mg

Exercise: 40 Minutes of at-home Circuit Training (alternating 1 minute sprint at 7.0 mph with various ST and balance exercises) and then 20 Minutes of Elliptical.... and of course I will stretch and make sure I do at least 150-200 crunches for my 3,000 crunches in November challenge!!!

I am hoping to burn over 500 calories!!!

Well... I should get started on some deliverable that are due by COB today at work... Have a SPARKTASTIC DAY!!!!!!

    You are doing so great, and your food looks yummy!!! I'll love to have some of those in my country, we do have delicious and healthy options but sometimes I miss the variety you have in the US.

    Great job on your food tracking!! Where do you buy your cinnamon and brown sugar bread? How many cals for each slice? Just curious!! I am a bread lover and whenever I can find delicious low cal options...I'm all over it :)
