For a while now I've been thinking: I want to make a home-made pizza. My mom used to make them from time to time and I wanted to do it. Well, at the grocery store I couldn't find the pizza Jiffy mix I remember mom using (and it was getting late, the store was closing, and Baby had been great but I was just waiting for her to be "ALL DONE" with shopping) so I found a Pillsbury ready-made crust and grabbed that. Grabbed some cheese and a jar of Prego spaghetti sauce. Why, you ask? Because I wasn't sure what pizza sauce I would like (I am still VERY fussy about any crunchy little onion pieces in my tomato sauce--YUCK!) and I know I like this so I used it. So tonight I spread out the dough, put on some sauce, put on some diced tomatoes and some pre-cooked broccoli and Voila! Home-made pizza. I entered it into the recipe calculator tonight. It's rather low on fiber, and certainly not a low-cal food. Of course, I could cut back on the cheese, use lowfat cheese, and I could and will look around for other crust options. This was great as far as being quick and easy, but there may be something else out there I like even better. I'm just kind of excited to have relinked with a favored family memory, as well as found a way to sometimes enjoy a favorite food but be in control of the ingredients.
