I had a friend visit this weekend. He wasn't interested in the whole DC Tourist thing so Sunday we did very little. I told him about how i've been cooking most of my food for the week on Sundays and he agreed to help me with that and also to cook me dinner as a thank you for letting him stay there for the weekend.
What I didn't realize was that he would cook enough food for a family of 10 for a week.
It was tasty, don't get me wrong - he made these eggplant roll-up things as a starter and then made mushroom risotto. And we ate maybe (MAYBE!) a quarter of it. And polished off a bottle of wine.
And now he's gone and I'm left with the food I made (mini-frittatas and spinach-tomato-feta pasta) and eggplant roll-ups and risotto, AND he was completely enamored by the farmers' market so I have extra eggplants, nectarines, garlic, zucchini, tomatoes (cherry and full-sized heirlooms), apples, cucumbers, and ciabatta rolls.
Definitely going to need to hit the gym!!!
