Dairy free Mac n cheese

Geez who would've thunk it but it's true. Wow it's great and weird realising how far I've come in being able to go, "gee I'd like mac n cheese" and adjusting recipe for my dairy allergy. Yep it's in my cookbook so feel free to check it out. Plus I'd love fellow dairy free SPs feedback. I never would've thought it was possible but now that I've found a grocery store with soy cheese the sky is the limit albeit still watching the calorie/sugar intake.

Hope you are all well, I'm still at teaching in SA and trying to find work in hydrology/environment with a preference to Canada. Right now, I'm stuck on the visa cos I'm too old for a working holiday (I refuse to truly believe that), not the right skills (Physics teacher isn't on the list), and no close living relatives there. So I continue onwards trying to find options for getting back closer to home. I miss the land, snow, family and friends plus another elderly relative just passed away and again I couldn't afford to go home:(

BTW I'm open to feedback cos I'm debating to do the 6 or 12km walk for the City to Bay event in just a few weeks (I haven't trained as much as I'd like cos I just found out the dates)-ugh I did ask the trainer in February about it. Right now, I'm thinking that I don't want to wear the pink for 6km but that's probably the most realistic distance for me as my first amateur race ever. Any suggestions?

    My trainer said that 6km walk is best for my first time cos I'm quite capable of 3km (I do that and more just at work everyday, LOL:) I know it's silly but I just hate that 6km walk badge is pink-UGH! Oh well, it's still worth doing it. Thanks for your support:)

    I always have a hard time finding the right soy cheese. The brand my store carries is dairy contaminated (lots of casein).

    What brand did you use (tofutti?). I am milk protein allergic so all of my recipes and work arounds are milk free.

    How long do you have to decide? Maybe wait a little while and see how you're feeling when the closing date for deciding is? Really though I think it's up to you and what you believe your body can handle, you don't want to push yourself too hard that you wont be able to exercise later, but if you believe your body can handle it then go ahead and have a great time!
