Girl, I hear you. I am not a big fan of cous cous either. I do not follow the SP food plan as far as their grocery list or list of foods. I eat my own foods and stay in my calorie range, and try to eat balanced meals. As far as the rices go, I try to avoid white rice whenever possible. I do eat brown rice quite often. That's a better carb choice, and you get the full nutrition.
I've always been a picky eater too. I'm learning to eat more things and portion my foods. I even bought a food scale to help me weigh meats.
If you look at my blog you'll see I lost almost 7 lbs this last month by tracking food. I'm hoping I can keep this up cuz I need to lose about another 60 lbs.
Go looking in spark recipes for your OWN recipes! There are sooooooo many good ones! if you don't like one of the ingredients, replace it with another healthy ingredient you DO like! Like you said... lettuce was a big step for you. Broccoli was a big step for you. No one said you hd to eat ALL of these healthy things all at once. Try new things gradually. Incorporate them into your recipes. You might surprise yourself. And a couple years down the road you might be like MMMMMMMMMM mushrooms and kous kous (sp?) lol Oh and remember you can always SWAP a food you do NOT like on the nutrition tracker for one that you DO like!
