Squeezing in the veggies.

I have a lot of trouble getting my veggies in. I like vegetables but yeah they are boring . I get tired of salad quickly. Not too long ago I tried adding fruit to my salads and now I can say there are a couple of salad recipes I wouldn't mind eating more often. This week I tried broccoli/slaw. I found a lot of recipes for it and tried a couple. I love it tossed with honey mustard dressing and diced chicken and it is excellent for adding to your morning eggs. My mom used to make a jello salad with orange jello and carrot shreds. Are you thinking what I am thinking?
As I keep trying new recipes my options for vegetable dishes I look forward to eating continues to grow. I used zucchini as a filler in my turkey meatloaf this evening. How do you like your vegetables?

    I love having fruits and veggies as part of my diet. I usually have a very large Romaine salad for lunch with some chicken, an avocado, or some type of beans. I prefer my veggies stir fried or grilled in the over with a touch of olive oil instead of boiled.

    I have 10 servings a day of fruits and vegies. I have a plant based diet and simply love it! I have salads most days.
