Vegan in Ecuador??

We just returned last night from the most fabulous trip to the Galapagos and the Amazon rain forest. The trip was magical but my first extended trip as a vegan.
I packed food, such as tofu jerky, dates, nuts, fruit and nut bars so I would always have something in emergencies. Greens I obviously couldn't pack. The 2 day stay in Quito, Ecuador was fine, fruit in the AM, a few mini empanadas of corn or plantains for lunch and salad, soup for dinner. I had requested a vegan menu for the cruise through the Galapagos but they don't get vegan, only vegetarian. Tons of eggs and cheese. I was able to manage ok and had a bit of seafood to supplement the largly missing beans - which was surprising. The big surprise was at Sacha Lodge in the rainforest. They presented us every meal with a large choice of veges and salad items that were all delicious. I will weigh myself on Sunday but I am either the same weight or slightly less than when I left. Very tired from the long journey home so will make this very short today but wanted to just say HI!
