End of Week One

Well I made it! After week one I have lost 3lbs!! I'm so excited about the journey ahead. At the moment I am pretty motivated. When I first looked at the meal plans my first thought was, "Oh boy, none of this food seems like it'll be too good." But, I'd have to say, that I'm pleasantly surprised. The baked potato with white beans and broccoli was actually good! So was the baked sweet potato with black beans, brown rice, salsa, and sour cream. What I have been doing is to prepare my lunch in the morning so I could just heat it up. Next week I think I'll prepare it the night before. I'm spending alot of time in the morning preparing, time I kinda don't have, due to the fact that I'm assisting 3 kids get ready for school. Here's to a great week two and hopefully at a 1lb weight loss!
