Still Vegan But Not Cooking

I don't know where my motivation to cook went, but it's gone :-( I don't know how long I can survive on Grape Nuts with almond milk, PBJ, canned beans on saltines, and hummus on melba toast!!! I'm just so tired when I get home from work, and my weekends are absolutely filled with long-distance cycling and working on my doctoral dissertation. I'm getting pretty tired of the foods I'm eating though. I think what I need is a better-paying job so I can hire a cook. Yeah, that's it, lol! Anyway, I just needed to get these thoughts out there. I've been ignoring this nagging problem of not wanting to cook and not making the time.

    Everyone gets like this at times. Maybe try some easy-to-cook stuff like wholewheat noodles and stirfried veg? Takes about 15-20 mins to do. Or you could try corn tortillas with salad, nuts and seeds - something like avocado, cherry tomatoes, peppers (capsicum), grated carrot, almonds and lettuce would fill you up and give you lots of nutrients.

    I get like that from time to time. I depend on salads and soups that I've frozen. Now I try to do with leftovers (but that does involve some cooking). Maybe check out some crock-pot recipes. Those helped me out in my busier times.

    Maybe do some batch cooking once or twice a week? A couple of hours cooking, portioning out, and freezing/refrigerating can give you a week or more worth of meals! Maybe make a big batch of soup or some casserole? Cut all your veggies to last you a while too, so those are always handy for snacks.

    Keep on keepin' on though; you'll get back in the groove!

    Hey there! I didn't see any fruits or veggies listed in your current menu rotation. So that's a good start, fruit salads, veggie pasta salads, smoothies all provide lots of variety. Gotta keep your strength up to power through those workouts!

    I get that way sometimes. I lean on vegan convenience food when I have those spells. Gardein products, Field Roast, I build lots of salads and eat frozen veggies. Sometimes life just gets too busy to spend an hour or more a day in the kitchen!
