Paula's Protein Pancakes

Okay first of all before I did this first pancake experiment I tried to find the porn pancake recipe. Now I think I definitely have this name correct :) Let me tell you I could not find it on any friend's pages and well don't search the web with those two words ;) I'm turning red. Wooo boy. So here is my first protein pancake attempt...

Good news... one serving which was two good size pancakes was

Calories 322

Carbs 43
Fat 2
Protein 35
Fiber 9

Bad news...

It was not fluffy, it was more breadlike and some of you may say ewww. I thought it was great, it filled me up and I like the amount of protein. I topped it off with warm blueberries that I sprinkled Splenda and a drop of water on to make a thin syrup . You could use agava nectar too. I made four and will pop the other two in the microwave tomorrow for 15 seconds!

I'll write down the ingredients if any one would like to try it. I have to keep experimenting to get it better.

    Paula, try 1 cup cottage cheese, 3-4 egg whites whpped and folded in an 1/3 cup flour, some vanilla. I sometimes will add vanilla protein powder. I am ALWAYS looking for protein recipes. xoox

    i made a carrot cake last night, and it was so mushy in the morning, but i did not care because i kept thinking of all the lovely fiber!
