Gosh, I am learning a lot from you. Lynndak's recipe sounds good too. I have never grown parsnips before and refuse to pay the huge grocery store price for veggies with wax all over them, so maybe I better plant a few this year to try. In the fall do you cover them with anything when you keep them in the ground over the winter? Have a great day celebrating Honey's birthday! Here's her carrot. I love parsnips but didn't even know that you kept them in the ground through winter. I have a GREAT recipe that calls for parsnips, carrots, rutabegas, onions and potatoes. Cut em up and throw them in a covered casserole with store bought vegetable stock until the dish is about 1/2 way full. Maybe a little less. Add fresh thyme and bake until tender. YUMMY!! Brought it to my relatives house on Thanksgiving and everyone loved it and wanted the recipe. Plus you get to eat root vegetables.
