I went vegan for 46 days!!!

Let me start by saying that all my life I struggled to eat meat. I just didnt like it never have. A few years ago I slowly converted to vegetarian. And for lent this year I went vegan. At first it was hard I LOVE cheese but now that Lent is over, I'm not entirely sure I want to go back to just plain old vegetarian.

I think I'm just going to try to be the best I can be giving what is going on around me.

    I'm just like you. Cheese was the single hardest thing for me to give when going vegan. But what I noticed was that I tended to top everything with cheese! It became a ubiquitous flavour in my life! When I finally went vegan, I was amazed at how many other wonderful flavours there are out there! Corn on your salad, tahini or nut butter on toast, jam on an english muffin, etc, etc! Good for you!

    Congratulations on a very healthy Lent and meeting the goal you set for yourself. I hope it was an enriching experience for you. When I worked in nutrition in India we used to say that the both the elephant and the tiger can be healthy. Vegetarians, though, have to work to get in enough quality protein. Meat eaters have to work to limit saturated and unhealthy fats. Cheese is yummy, but the fat not so good. -Marsha

    Hello and Happy Easter. They have a vegan cheese at Big Y that I just tried and really like.. I work at a large universtity (CCSU) dining services and we have a large vegan station everyday at lunch and dinner. the choices are endless. I have gotten a lot of ideas from that station. I bought the cheese and it is made from soy by Galaxy Nutritional Foods... They have "cheeses" at the end of the produce department.
    Trader Joes has some great "chickenless and beefless" items made from soy..
    The choices are out there that's for sure ..

    that's so cool! i've been a vegetarian for a whole year as of yesterday and i can only imagine how difficult veganism is. not that being a vegetarian is particularly difficult, i find it easy, but because there are so many restrictions in veganism. i will be on your level one day. i suggest you stay vegan...atleast for as long as possible.
