My husband is a pastor serving a congregation on Long Island and every year he and I host a dinner for the church's board as a way of thanking them for their faithful work during the previous year. In the past I created menus without any thought to the number of calories I'd be serving to these dear people but last year I served a potato casserole that was 500 calories per serving and it haunted me all year. So I resolved to do it differently and with Spark's help I succeeded.
I served a meal that was less in total calories than that legendary potato casserole. (mind you, the guests brought the desserts so those calories aren't included.) I used 6 different meatloaf recipes from SparkPeople, roasted cauliflower, a zucchini/quinoa casserole and roasted potatoes. Tweaked the meatloaves just a little by using either tomato sauce or taco sauce instead of ketchup ( I have a personal adversion to the sweeteners used in ketchup.) and used a SparkRecipe to make millet crackers instead of bread crumbs or ritz crackers because of dietary restrictions. Got rave reviews and requests for recipes.

I used her method of cooking personal meatloaves in muffin pans. Got some comments on what a great way to insure portion control. Just reduce cooking time.

And one last cudo. I want to thank DEE_SPARKS for sharing her "Cracker - Wheat/Gluten/Yeast Free" recipe. I wracked my brain trying to think of a good substitute for the bread crumbs and Ritz crackers listed in the above recipes. You saved my sanity and helped me make someone (who usually has to avoid half the food on a menu because it contains gluten) feel included.

I'm going to the recipes now and leaving glowing reviews on each one!
