Hi Out There!
I haven't been soo active here on Spark as of late, because I've been busy with some new projects at work that started up in the New Year. It's good to be busy!!
Anyways, I wanted to share some amazing Snowshoeing adventures that a few friends and I did last weekend. I had so much fun, it didn't feel like exercise at all, how cool is that?
It was freezing when we first got to Northerly Island, an island park on Chicago's Michigan shore:
We went into the field house, checked out snowshoes, and then we had the whole park to ourselves on a blistery cold Sunday morning:
It was so beautiful! And who knew something like this exists just 20 minutes from my apartment. We're all planning on going again after the next big snow.
I've been doing tons of cooking lately, so here's just some fun stuff that I've made in the last week:
Low-fat Banana Muffins, Moosewood Winter Vegetable Stew, Tuna Noodle Casserole, Peas & Potatoes Masala, and Butternut Squash Gratin w/ Goat Cheese & Hazelnuts.
Here's where I am on my goals for the month:
Cut out Alcohol for the month with the exception of New Year’s Eve. - Okay, so I broke down and had a glass of red wine when my gf and I went out to dinner on Saturday night. I'm still working on this one in spirit though, and I'm going to try to get through the rest of the month with no alcohol.
1,500 minutes of fitness. - Only 495 more minutes to go!
Complete Weeks 3 – 5 of C25K—giving myself room to repeat a week if needed. - Started Week 5 today!
Try 4 new recipes. - Blown this one out of the water.
Write my first short story. - I'm re-starting a new story. I hope I'll be able to get this one done.
Get out of the 160’s!!! - Oooh, I'm so close. Last week's weigh in was 161.6.
