food bliss

The last few days have been really good! I have been low on groceries since before Thanksgiving and still haven't had a chance to stock up, so for meals for work, I've been going to the deli at my food co-op. I'd never explored the salad or hot food bars there and now I'm totally regretting not doing it sooner! I've been making HUGE salads with lots of yummy veggies and this amazing miso onion dressing and eating half for lunch/snack, half for dinner (because of work I tend to eat at weird times). Then I've been eating the hot food for lunch and making an sandwich at work with the loaf of sprouted grain nut & seed bread I bought and their egg salad.

At the hot food bar, the first day I had a pumpkin fritter, steamed kale, and quinoa with sweet potatoes and craisins. It was amazing! Especially because pumpkin, kale, quinoa, sweet potatoes and craisins are all some of my favorite foods. Then yesterday I had a little bit of leek and bacon frittata, roasted sweet potatoes, and ethiopian cabbage and carrots. It may sound like a lot, but I just took a small portion of each thing and afterwards felt completely satisfied, not stuffed full at all. True food bliss!

I have today off so I'm planning a big trip to the grocery store to stock up, as we are pretty much out of everything! As much as I'd love to just eat at their deli everyday, that would get very expensive very quickly!

Last night I also made amazing oatmeal chocolate chip cookies and managed to eat just one...ok, one and a half. This morning the scale finally budged from the steady 173.6 it has said every day since thanksgiving to 172. Slowly, but surely I'm getting back to 160ville!
