Lots and lots of cooking

I just finished cooking 3 - 4 different clean eating healthy meals for the week since I start the summer semester of school tomorrow night from 6-10 pm on Tuesdays and Thursdays. That leaves me with about 15 minutes from the time I get home from picking my son up after work to get something ready. I enjoy cooking and actually found it fun and relaxing at the same time, but I won't lie, it was an AWFUL LOT of cooking going on in my kitchen tonight and I am TIRED!!!! But hopefully it will be worth it for the rest of the week and i won't have to think about what I can put together on the way home like I normally do and we won't be tempted to get the evil pizza I can't resist, especially when I am short on time. In case anyone is curious, I made:

Mac and cheese recipe from The Clean Eating Family and Kids book ( I tried some and it is has a really good taste because it is made with mashed sweet potato and yogurt cheese. But this is definitely not a gooey, drippy cheesy mac and cheese so I'll be curious to see how it goes over with my son tomorrow night).

Chicken, Spinach, and Ricotta Quesadillas

Italian Turkey sausage meatballs to go over spaghetti squash with diced tomato

Hummus for snack or as a spread on a chicken sandwich

Edammame salad

I also got a bread machine last week and tried it out on Sunday. I can't even believe how easy it was. I did practically nothing except measure and pour ingredients and it was so cool to watch. Fresh homemade bread tastes so much better than store bought. I plan to use this every week and I don't think I'll ever go back to buying bread again and the grocery store.

So that wraps up my whole night, which was good because it meant no time for lounging on the couch and mindlessly stuffing my face with my sons goldfish crackers or something like I usually do! Good night

    Do you have a bread machine? I think they are good investment. I got a Sunbeam one from Walmart for $50 and it works perfectly even though it is not one of the more expensive "fancier" models. I'm going to try to make whole wheat banana bread for my son this weekend.
