Amanda's Yummy Frittata

I made this frittata last night, and it turned out to be fabulous, so I thought I'd share. Enjoy!

4 servings

8 large eggs
1/2 onion (diced)
2 potatoes, sliced thinly
6 spears of asparagus
1 tbsp evoo
1/2 cup feta

Heat your oven to 450 degrees. IN a bowl wisk together the eggs with a pinch of kosher salt and set aside. In a small (8 1/2 in) nonstick pan, heat the oil and the onions, with another small pinch of salt. Cook the onions on medium high heat until they start to brown, about 10 minutes. Add the potatoes and asparagus, and cover and cook for another 5 minutes. Take everything out of the pan and set aside. Pour the eggs into the pan, and cook until just set. Add the potato mixture, and place the entire pan in your oven for about 10 minutes. Add the feta and turn off the oven, allowing the feta to melt slightly into the pan. Serve and eat while warm. Enjoy!
