Rummage through your pantry and try a new combination or a twist on an old favorite. Your family will appreciate the creative, new meal. Flex your brain muscles a little when approaching problems. You might be surprised how resourceful you are!"
This was the Healthy Reflection from SparkPeople today. I couldn't help but feel a connection to this statement because that is exactly what I did today. Dinner time approached and my son was begging for food before it was even made. Needless to say, I was struggling to figure out what to make. I finally settled on a Chicken Pot Pie made with Bisquick's Heart Healthy mix, chicken, carrots, and celery. Once that was in the oven, I knew I wanted to toss a few more fruits or veggies into the menu, but, needless to say, I was out of most of the fruit I wanted to use. I had one apple, a few bananas, and some mandarin oranges. So, a new recipe was born when I tossed those together with a few marshmallows for sweetness. The kiddos and the hubby raved and I was happy to have the extra fruit servings. Mission accomplished.
