Alright, here's a little recap:
Friday was a total buffet/gorgefest at work, followed by lots of drinking. Saturday I didn't go overboard on food, but my choices weren't exactly healthy. Sunday I got back into the swing of things big time with healthy meals (including some of the best fish tacos to date!!) I also did an outdoor run, ST, a mile walk with my bf AND a ton of cleaning. I burned over 700 cals, woohoo!!
On sunday I made a delicious pumpkin lentil soup.
Here's the recipe, in case anyone is interested:
Over medium heat in a large saucepan sautee 1 chopped onion with 1 tablespoon olive oil and seasonings (ginger, cumin, cayenne pepper) for about 3 minutes. Add chopped butternut squash (I used slightly more than half of a frozen package) and 1 can pumpkin (unsweetened) and cook on medium heat for approx. 7 minutes. Add 12 ounces of vegetable broth and increase heat to high to bring to a boil. Once boiling, reduce heat to low and let simmer, covered, for 10 minutes. Add 1/2 or 3/4 cup red lentils and let simmer for an additional 7 minutes. Taste and add more seasoning if desired. In batches, puree soup in a blender or food processor and reheat if necessary. Voila, simple and delicious :-)

Yesterday was a decent day, workout-wise. Out of excitement for Obama's win I jumped on the treadmill and did 3.5 miles of intervals. I'm so happy about the presidential election votes, I seriously cried yesterday - while laughing, it was a huge mixture of emotions. On the downside, I'm sad that Prop 8 looks like it will be passed (unless there's an overwhelming count of No's from the absentee ballots...) Voting to take away the rights of others is so backward and it makes me cringe that as a nation we don't seem to learn from the past. Civil rights battles shouldn't still need to be battles, but since it's the case, I'm willing to fight ;-)
Alright, that's all I've got to update. I'm planning on doing 30 minutes of hills tonight, as well as ST. Bikram tomorrow and a long run on saturday.
