Our challenge for today in my NWYL group is to try a SparkPeople recipe with an ingredient that you've never used before.

I'm not big on veggies. I've made that point pretty clear in the past year. I'm soooooo bad at getting veggies in, unless its a pasta sauce or stir fry or something. But even then, veggies are just not my thing. I'm good with fruit. There are very few fruits that I don't like. But veggies are hard for me. And I'm getting better. I can eat cooked tomatoes now, and I'm starting to like onions and green peppers a little more. But that does not a balanced diet make.

I recently found out that my husband LOVES eggplant. He loves squash of any kind, apparently. I had no idea. I've never tried eggplant before, so this weekend I am going to hunt one down and try to make some Eggplant Parmesan.

I'm hoping that I like it, because I know I need to (and kind of want to) try to fit more veggies into what I eat. For any of you who like eggplant, are there ways to make it NOT taste like a vegetable? I'd be a fan of that.

I'm really nervous!! Excited, too, because I've grown to enjoy cooking. But nervous!

    Have you considered those cookbooks that 'sneak' veggies into regular recipes? Like garbanzo beans in chocolate cake (seriously! I saw it on SparkRecipes.com) or carrots in meatloaf.

    Sounds delicious...good luck!!

    Recipes that call for 'salting' the eggplant prior to the rest of the prep usually have a better texture. After it's sliced, sprinkle with salt and let it sit...this will cause the liquid to drain out. Just make sure to rinse and pat dry afterward so it's not too salty.

    Well, eggplant parm is a great way to sample it because you have pasta sauce and some cheese to help get over the veggie hump. I love eggplant, and I don't think the taste is too veggie, but if you don't like squash, you aren't going to love it.
