I cannot believe it!! After all this time, I finally went over my calorie goals yesterday!

My hubby smoked a lot of spareribs & chickens Sunday, most of which he passed out to a couple of neighbors as thank you's. I had two of the spareribs last night for dinner, remember that's just 2! I so went over my calories with those two ribs. Who in the world would have thought that something with hardly any meat on it could be so darn fattening!!! He can just eat what's in the freeze all by himself!!!

I've been so good for so long and now this!!! My advice is to pass on ribs of any kind!!!

    Here's an awesome rib substitute for you (I love ribs too).

    Mix 2 T of chili powder, 1 T of cumin, 1 tsp salt, 1 tsp pepper, 1/4 tsp red pepper.

    Take a pork tenderloin and coat it completely with the spices. Put it in a baking dish and add beer to the dish until the bottom of the dish is covered (about 1/4 inch). Cover tightly with tinfoil and bake for at least 1 hour on 250 degrees.

    Remove tenderloin from the oven and brush with a commercial BBQ sauce. Heat your gas grill and finish the pork tenderloin on the grill - - 3 minutes each side. Serve with BBQ sauce on the side, or I prefer applesauce.

    The tenderloin will be very tender and delicious with a rib like flavor. Not quite the same, but a good substitute that's much, much healthier.
