Thinking of my last minute dinner yesterday: congrĂ rice (rice w/black beans), baked vegetable medley (butternut squash, broccoli, potatoes with rosemary) topped with egg over medium and baked bacon bits. Definitely NOT low carb, but so flavorful because it was home cooked with love.
