    Hello, I saw your posting about the Fumi Tofu Salad. I enjoy it too. I have made it several times. Here is a recipe I got from a chef friend of mine who tried to replicate it:

    Fumi Tofu Salad:
    1 head of cabbage, chopped
    8 green onions, chopped w/greens
    1/2 c. toasted sesame seeds
    ½ package of extra firm tofu, cut into bite sized cubes, lightly brown in skillet using EVOO and let cool.
    1/2 c. slivered almonds, toasted
    1 cup of asian noodles (or may use 2 pkgs ramen noodles, uncooked, crushed)
    Dressing:
    1/4 c sugar (or sugar substitute)
    1 tsp cracked pepper
    1 c salad oil (add a dash of sesame oil)
    3 Tbs soy sauce
    6 Tbs apple cider vinegar vinegar

    Combine all ingredients in bowl and toss lightly. Mix ingredients for dressings and add to bowl. Toss a few mintues more. Serve chilled.
