My Goals:
In no particular order of importance:

1. Be at my goal weight by the end of May 2011

2. Change my eating and fitness habits for the better

3. Exercise regularly and motivate others to do so too

4. Create new healthier versions of yummy recipes

5. Get away from packaged foods as much as possible

6. Choose organic when possible

7. Enjoy the outdoors more this summer with exercise and other fitness activities!


My Program:
I have done the low carb program before, actually Somersizing, with great results many years ago. I had lost about 30 pounds and kept most of it off until this past year where the irregular exercising and not really eating right has made about 10 pounds creep back up!

This time around, I'm still incorporating some of the Somersizing methods into my program but I'm not really going so restrictive level 1 and am allowing myself to let some carbs into my diet and cutting back on some of the fat.

Of course, the food is offset by my plans to incorporate exercise atleast 5 times a week into my schedule, no less than 30 minutes of some cardio activity.

Adding a 2-3 days with strength training, nothing majorly intense at this point but will increase in the weeks/months to come.

And I'm fueling my body with food every 2-3 hours about 5-6 times a day as a way to jumpstart my metabolism.

    Thanks for the comment on my Sparkpage. As for how I get my steps in, I put my pedometer in my pocket when I get up in the morning, and walk everywhere I can. I make it a point to do at least 2 miles of my walking as cardio, which is about 4200 steps. I take the stairs, and take the long way when I go places at work (I work in a hospital). I had a total knee in July 2007 and I know if I can get the weight off the knee will last longer. Keep it up you can do it, when I started in Jan I probably couldn't walk 3000 steps a day, now I feel bad if I don't get 11 or 12,000.

    Thanks, glad you enjoyed the pics. I found the zucchini cake recipe at allrecipes.com, it's the Chocolate Zucchini Cake III (http://allrecipes.com/Recipe/Chocolate-Zu
    cchini-Cake-III/Detail.aspx) but I tweaked it a bit by substituting apple sauce for the most of the oil, white whole wheat and cake flour for all purpose, and used 2 eggs and 2 egg whites. I also used organic cane sugar instead of the processed stuff and cut back on the sugar period. Sometimes I'll substitute somersweet for the sugar and that gives no calories or carbs and it tastes more like sugar than anything else I've tried. I tend to make my cakes the chiffon style where you beat the egg whites separately to stiff peaks and then fold in at the last minute, just a personal preference. The zucchini really makes the cake moist and doesn't alter the taste of it either! Plus it gives you a lot more nutrients too. Lately I've been really into making bran muffins...I wonder if I could add zucchini to that...hmmm...I think it's worth experimenting tomorrow! emoticon
