Saw you stopped by my menu blog. I know it is hard cooking for one person or two. I always cooked for 4 to 30 so being empty nesters was hard to get used to. It took a few years for me to stop cooking so much. When our son first moved out he always came by on the weekend to watch a movie while his clothes were in the washer and dryer, eat dinner, and left with all my leftovers from the freezer. At least he came over! You don't have kids nearby? Maybe going to a senior activity center or church activities will keep you busy and you'll find new friends. Most hospitals have free walking groups too.
If you have a FoodSaver it is so easy to make a big meal and save portions for other meals. We do that a lot. Like spaghetti sauce. I always make enough for 12 people and we freeze portions for later. All I need to do is cook enough spaghetti noodles for two people and make a salad. Easy meals. Pinterest and so many cooking sites have easy meals for one or two people. I even bought a bunch of cookbooks dedicated to meals for two. 1227 days ago
