Thanks for reading my blog. That is so weird. One of my daughters is a major slob and the other is super tidy - just like me. I actually had to see someone because I got so OCD that I bought a rake to straighten the fringe on a throw rug. I knew I was way over the line. I am much better now, but, if I had seen his house (or even this terrible state) before I married him - it never would have happened. Isn't that a terrible thing to say? But he agrees. I forgot to post that the pie worked out pretty well. I used a gluten free pie crust mix with vegetable shortening. (I've used the same mix since with some cornmeal to make scones and for a few other things). I used a can of organic pumpkin, xylitol as my sugar replacement and thickened rice milk made from a rice milk powder mix (double the powder for the water amount). I used my basic Betty Crocker cookbook recipe with the above substitutions. I had extra pie crust, so I baked a sweet potato, mashed it up and used the same substitutions to make a small sweet potato pie as well. Both tasted pretty good and my SIL was THRILLED that she could have pie. I even brought some rice whipped topping that is almost as good as cool whip. (I don't do Soy due to allergies, so I use rice and coconut milk as my main substitutions) 2321 days ago
