    Today I made cookies to take to a playdate. I then proceeded to eat and eat and eat them. Why do I have no self control? I am going to have to start over with a clean attitude.

    I have noticed that. I still take a multi vitamin every couple of days. The leafy greens are a good trick too - I bought a lot of spinach last week (the little tender ones, yum). I made their spinach - tomato wilted salad, for a snack. Great idea to make the spelt pancakes! Have you seen that you can type the recipe in?

    Oh, and I forgot to tell you I made Angie's Spelt pancakes today, added frozed blueberries and served them up as snacks for me and the kids (No syrup!!!). Worked out great and the kids liked them. Not the most nutrient rich snack, but better than Ritz crackers!! I am going to try modifying them with some flax and a few other things to see if I can make them heathier!

    Have you noticed how hard it is to reach your protein, calcium and iron goals? I am shocked at how far off I am some days. Part of it is b/c I am cutting my calories, but I realized that I really need to be planning my meals out better to ensure that I am eating healthy every day. I also need to be more aware of this when I am feeding the kids. They eat lots of fruit and veg, and drink lots of milk but I think I need to find a way to get some leafy greens and more protien into them!!
