    I just reread the diet book I bought a while ago.. THe Insulin Resistance diet.
    I think I'm going to go get my insulin fasting levels checked just to confirm.
    In the meantime I've been trying to use their method. (They allow you to eat more carbs simply by linking them to proteins.)

    I'm still failing a little.. but we'll see how it goes next week when I plan to start writing down my "linking".

    I also notice that while I am getting better at staying in calorie range.. I am eating more fats (read: cheese) as a way to not eat carbs. Not sure it's a good trade off...
    Today wasn't terrible though 40/28/30 for carb/protein/fat.

    I need to find ways to eat more protein that doesn't involve cooking a whole meal..

    Quinoa is a grain that is high in fiber and protein. It tastes kind of like a nutty brown rice to me- it's a little gritty in texture but not too too bad. The thing that drives me crazy with it (and rice too) is because it is small little pieces it goes all over the place on my dish LoL...It is a wonderful rice alternative and anything you make with rice you can substitute's good because it counts as a whole grain but protein is high as well...I like chopping up chicken, a few veggies and mixing it all together or sometimes I will eat it plain just made in homemade chicken broth for flavor (no added salt)...give it a try =)
