You guys are great... Thank you for all of the links provided and suggestions. YES, SparkRecipes are extremely helpful.. Everyday I check these and have an entire folder started just for quick access :)

I just read you blog about making Mango salsa...amazing idea! I can't wait to try it. We have a friend coming for dinner who has recently gone vegan. But he just loves to eat yummy stuff. Luckily his wife is an amazing cook so I'm sure he is eating well but I want to collect recipes of stuff that maybe she hasn't prepared.

I have had the best meatless recipes from here...opps it won't let me post their link.

But it's the vast recipe section at PETA org The website is easy to use and search on. Good luck and congrats on your choice.

Beans are always my favorite meatless go to. Open a can, if you must, but rinse the beans to rid them of some of the salt used in the canning process. Then let your imagination flow. Try black bean salad on a sweet potato, bean and cheese quesadilla, hopping john, maybe a edamame fried rice. Not only do the beans provide amino acids but also fiber and a host of vitamin and minerals.

Here is a link to a recipe on my food blog (my very neglected food blog...) But I make this as a side dish often, and could just as easily be made into a meal - as stated in my article. You want easy and meatless, here it is! Enjoy :)

I've added two links to articles about meatless meals. I try to have one or two each week but I usually just wing my recipes. I tend to use regular recipes and substitute the meat with things like beans, lentils, quinoa, etc. I also use egg whites as protein for my meal and just add sides.
