My best suggestion for eggplant is to slice it/cube it, however you'll be using it and salt it. I place slices on paper towels, salt it and let it sit for 20 minutes for so. I then rinse it and pat dry with clean towels. This draws liquid from the eggplant and makes it taste so much better. Just continue then with the recipe you're using. I'll sometimes bread and fry it, bake it or grill it. Or just add it to your dish. I use it chopped in a ratatouille as well as in a pasta sauce.
