why not skip the pie bit... cook rhubarb with something like sweetner, make a real egg custard to add protein and just sprinkle on top one graham cracker for the taste and texture. I make a reverse cheesecake like this and its just great, the topping adds the flavour without a load of butter and loads of the base.
