I found this, haven't tried it but it sounds useful:

Cream of Condensed Soup Substitute – adapted from One Orange Giraffe

1 Cup Instant Nonfat Dry Milk
3/4 Cup Cornstarch
1/4 Cup Bouillon
4 Tbsp. Dried Minced Onions
1 tsp. Dried Basil
1 tsp. Dried Thyme
1 tsp. Black Pepper
Combine ingredients and mix well. Store in an airtight container.

To make the equivalent of one can of condensed soup, combine 1/3 Cup of the substitute with 1 1/4 Cups Water. Stir and cook over medium heat until thickened.

As soon as I see "Can of Cream of XXX Soup" in a recipe, I click to the next page. I don't know if I've ever used a can of that crap.

I imagin beef broth, a little bit of potato and milk would work fairly well if you there's a recipe that you really want to use.

Personally, I'd just look for casserole recipes that feature real food instead. There should be plenty that have tomato-based sauces instead.

I puree them with potato! I NEVER use any form of cream or milk in my soups.

One particularly yummy, filling soup is potato, peas, onions - puree them up to a creamy texture with a couple handfuls of tasty cheddar cheese - soooo yummy - especially with toast on a really cold night.

If you google Clean Eating Cream of (whatever) soup you will find some good homemade alternatives - think the Gracious Pantry website has some too

You can make an even lower calorie white sauce by using just milk and cornflour (cornstarch? I think thats the US name). You need no butter then like you do in traditional white sauce.

coconut milk is rather thick too. But you have to make sure it is coconut milk *usually in a can) and not coconut beverage that you get from the dairy section.

ive used cauliflower to make "cream of mushroom" soup
just boil the caulifower until its mushy, drain water and puree... return to fire and add what ever else you want, spices veggies, etc. it takes the flavor of what ever you add to it.

I love the idea of casseroles and one-dish meals, but so many of them call for condensed soups (cream of chicken, cream of mushroom, etc.) and I HATE them. Does anyone know a good substitute for these -- maybe making a white sauce from flour and chicken broth? Thanks!
