low heat meals?

I like to use my grill or toaster oven when it's hot. I like to cook in foil for an easy clean up. A piece of boneless chicken, veggies and thin sliced onions and potatoes with a bit of butter and 20 minutes to cook, turning every 5 minutes. Make extra so you can reheat it in the microwave the next day.

I love crockpot cooking. Put the stuff in before I leave for work and when I get home the whole place smells yummy. Hope you're still enjoying SP.

This Sunday I made a bean and corn salad that I am taking for lunches all week. It's pretty good, and you can use what you have on hand to make it. Mine included:

Kernels from two ears of sweet corn
One bag of frozen blackeyed peas
A few chopped baby carrots
Several chopped banana peppers
Minced garlic
Green onions
Halved cherry tomatoes
Apple cider vinegar
Olive Oil
Salt and pepper

Yesterday I had it for lunch over chopped Romaine lettuce
Today I had it for lunch with some leftover sauteed veggies thrown in and mixed with a can of tuna
Not sure how I'll have it tomorrow

You can do all sorts of variations on salads like this, with or without meat, and using any combination of veggies, beans, corn or grains (rice, bulgar or quinoa for example). Cheeses like feta or fresh mozzarella are also good if they fit into your meal plan.

Another thing I like to do in the summer is grill our dinner on Sunday night and cook extra things while the grill is on, like potatoes or extra proteins that I can use throughout the week so I can avoid cooking on weeknights. Last weekend I cooked sweet potatoes and beets in the residual heat from the charcoal grill.

My favorite ways to keep the house cool:
Cook meal in an electric wok.
Make a salad bar.

I've also been using my crockpot . Adds almost no heat to the kitchen. Our favotite is....
cubed chicken breast
can cream of chicken soup w/one can water
bag of mixed veggies
Cook several hours on low or use the high setting for less time, until chicken is done.
Serve over pasta or rice

Boneless pork chops
cup orange juice
can cubed pineapple w/juice
chopped green pepper
chopped onion
cook in crockpot several hours until pork is done and tender
For a thicker sauce, mix about 1-2 tbs of cornstarch in 1/4 cup Hot water stir until smooth then add to crockpot to thicken sauce. Do this when meal is about halfway done.
serve with your favorite side

The sodium might be a little high, but this rdcipe looked so yummy, I was thinking of trying it myself...maybe adding some cooked shrimp to it...

There are hundreds of crock pot recipes out there if you own one. Plus throw the stuff in and forget it. Greek seven layer salad is good if you like hummus? Greek or Italian pasta salad or wraps.

Do you both like tuna ? Tuna salad with a bit of mayo, chopped tomato, onions, cucumbers, pickles, olives etc etc.
Eat stuffed into a whole wheat pita pocket or wheat bread ?

What about omelets ? You can add whatever veggies and cheese you have on hand and you won't have to cook on the stove too long either.

You could cook some boneless chicken in the microwave and make chicken salad too !

My house is hot enough as it is without adding the oven or stove to it.... any ideas for lettuce, apple and strawberry free meals (husband has unfortunate allergies)I can do using the microwave or minimal heat? Would prefer no beef, pork or lamb, but I am used to finding substitutions for these :)
