Here are a few we eat during the summer for dinner: Southwest salad: Romaine lettuce, shredded co jack cheese, canned whole kernel corn (drained and rinsed) tortilla chips crushed, tomatos, olives (optional), and the dressing is 1/4 cup picante suace mixed with 1/4 ranch dressing.
Chicken Tostada salad: set oven at 400 and put flour tortillas on a cooking sheet and bake for 10-15 min till lightly brown and crisp, in a skillet cook chicken breats bite size pieces, add a little canned or frozen corn, a little salsa and heat through. To make salad put romaine lettuce in bowl, top with chicken mix, add some cojack cheese, dressing use a little greek yogurt and a splash of milk to thin it out and drissle on top, crumble the crisp tortillas on top.
Cheeseburger salad: Brown hamburger (or turkey) drain greese, add 3/4-1 cup ketchup, a little mustard,chopped onion, stir. use romaine or mix with spinach, top with meat mix, cojack cheese, tomatos, pickle relish (optional), croutons.
I do salads of some kind all the time. I haven't really found veggies and fruit that don't go together. One of my favorites is spinach leaves with berries. I usually put a light vinagrette or just some lemon squeezed on it. Another is kale with berries. I have also found that I really like arugula. It gives a peppery taste without having to add pepper. I add apples to my salads a lot or cut up grapes. I have also used cut up cherries.

Homemade salad dressing ideas:
~ warm up some orange marmalade and wisk together with white vinegar to make an orange vinaigrette. I'll use this one with mandarin oranges, red bell peppers and edamame to make an asian salad. It also goes really nicely with toasted hazelnuts or almonds on a simple green salad.
~ extra virgin olive oil with balsamic vinegar makes a simple balsamic vinaigrette (jazz it up with seasonings if you want). It goes with anything; I usually have a plain mesculin salad with this dressing and a few shredded carrots. But for a more interesting idea, try fresh red grapes and crumbled blue cheese with this dressing. It's awesome.
~ fresh lime juice combined with olive oil and a little honey makes an awesome lime dressing. I pair this one with mangos, cashews, and a little bit of cheddar cheese on my green salad. But it's also great mixed with black beans, corn and edamame for a non-lettuce southwest-style salad.
~ warm up some raspberry jam (not jelly) and add raspberry vinegar, olive oil and cracked black pepper for a good homemade raspberry vinaigrette. This is my husband's favorite. He likes this one on field greens with crumbled feta cheese and dried cranberries.
Doaes anyone have good recipes or ideas for summery type lettuce salads? I can eat a regular garden one, lettuce salads with fruit, cheese, and some kind of nuts are even more awesome to me though. I have had a few with ingredients from blueberries or strawberries, crumbly cheeses like feta, pecans or cashews and all sorts of ingredients like oranges. I have never tried making one and I am not the best at knwoing what goes together without tasting everything all together and knowing its a bad combo. Also the ability to eliminate dressing or make a homemade dressing would be great. Thats also a first, never made any and not wute sure where to start. I am open to anything and blue cheese is a favorite and would love to find a way to add it to a salad.
