As you can see by all the responses, boneless, skinless chicken breast is so versatile and leftovers can be used in many, many dishes.

I personally like cold cubed chicken breast by itself as a high-protein snack, maybe paired with some cut up veggies to make it even more filling. Also, it's really good eaten with fruit - especially pineapple or blueberries.

I shred up leftover chicken breasts and use them in a great chicken salsa soup recipe that is perfect for cool winter nights. Here is the recipe I found:
salsa-soup.html. It doesn't call for them, but I also add a large can of black beans as well. You can easily make it spicy or mild according to your likings. I tend to make a big batch over the weekend and freeze it for quick and easy weeknight dinners :)

You could try chopping it up and adding some vegetables (I like celery) and some fat free mayo, lemon juice, some spices... make it a chicken salad!! It goes great with crackers, wheat bread, wrap bread...

Oh, wow! I love having leftover chicken. I guess most of these things have already been mentioned. Sandwiches, wraps, chicken tacos, throw it into fried brown rice, dice up for soups or casseroles. I purposely try to make extra chicken breast when I prepare it so I have some left to use for other things.

homemade buffalo chicken pizza! white sauce, garlic, onions, mozzarella cheese and hot sauce. use a tortilla for a conveniently portioned serving. or i make a skillet type thing with steamed veggies. toss everything in a frying pan with some veggie or chicken broth, let it simmer until the liquid is almost gone and top with whatever cheese you want.

I love making coronation chicken... in a healthy way!

Mix the cut up cooked chicken with some cottage cheese instead of mayo, then add a teaspoon curry powder, some chopped almonds, a few raisins and some peach chunks. Makes an amazing cracker topping or salad side.

Lucky! I love leftover chicken. You can freeze it and later cube it up and toss it in a stew, soup or chicken pot pie. You can simmer it in fajita seasonings and make burritos. Slice it and make sandwiches (try hummus instead of mayo!)

In a wrap.

On home-made pizza.

Made into chicken salad (with mayo, spices, etc.) in a wrap or on a sandwich.

Put in stir-fry.

I make batches of brown rice and freeze it. Then with leftover chicken I just throw it all together in a skillet, heat it up with some homemade chicken broth and put it on a whole wheat wrap. Low cal, low fat, and full of flavor!

Leftover chicken is great in a sandwich with lettuce, tomato, and a little bit of mayo.

I like making chicken salad with chopped celery, pickle, cucumber, carrot and kraft fat free mayo on whole wheat pita chips. YUM!

Chop them up, throw them in a skillet with some taco seasoning, then put in a taco shell with salsa and a little bit of cheese. My favorite! emoticon

I used the leftover grilled chicken from last night today to make a sandwich. You already mentioned salad. You could also dice up into soup.

Try dicing them and adding them kind of early on to the pot while you cook down a little onion, bell pepper and celery. If you have a little stock to cook that in, so much the better. Season it with salt and pepper....maybe try a few herbs that you like....and don't cook it dry. I like mushrooms in this, too.

HELP... what do you guys do w/leftover grilled chicken breasts? reheating it in any way just dries it out beyond being able to eat it.
i do not like red tomato sauces and most other sauces are too high in calories so im stuck as to what to do with my leftovers. i have ended up throwin them out every single time i have them.
oh...and yea, i know, put it on salad but any other new ideas?
